Summer Lovin'

Today (like most Saturday's in the summer), we went to the Carp Market.  We weren't going to, 'cause I was tired (asthma is killing me this summer).  But my hubbie talked me into it.  Aww shucks, I love the market.

I saw some great produce (as per normal).  We got corn (of course), from Hudson's.  Truly the best corn around here (Ottawa)!  I know I've mentioned them before, along with the Carp Market!

Today, I decided on two other purchases.  A big basket of red bell peppers and some lovely cherry tomatoes.

I'm a pepper, you're a pepper...wouldn't you like to be a pepper too...roasted pepper....mmm roasted pepper!

So this afternoon, I tossed all the peppers onto the BBQ (as is) and got them all nice and roasted.  Truly my favourite way to enjoy red peppers.  I'm thinking there is going to be a goat cheese and red pepper omelet in my future (tomorrow morning to be exact...I'm looking at you, my omelet making hubbie). Love you!

Not quite ready...need to get burnt!  Not sunburnt, like someone who is camping this weekend, but whom I won't name...but am giggling about it.
It seems like a lot of peppers, until they roast down.  The peppers that are left (after my omelet), will be pureed along with the roasted tomatoes (and some garlic and basil) to make a simple tomato sauce (to be put in the freezer for future uses).
All of those peppers fit in this bowl!

And once they were all skinned and seeded, fit in an even smaller bowl!  Crazy!

The tomatoes were tossed in a little olive oil along with some salt and pepper and roasted in the oven for about an hour.

Total Shrinkage.
These turn into candy.  It's true!  (In a sense.)  They become so sweet and tasty and really shrink down to pure goodness.

Basil is at the ready.

I love this part of summer, when all the veggies are at their best.  I hope to have a reminder of summer in the freezer (with these peppers and tomatoes), when the cold winds of winter show up here.  But that's so far away, let's not think about that right now!
