I saw some great produce (as per normal). We got corn (of course), from Hudson's. Truly the best corn around here (Ottawa)! I know I've mentioned them before, along with the Carp Market!
Today, I decided on two other purchases. A big basket of red bell peppers and some lovely cherry tomatoes.

So this afternoon, I tossed all the peppers onto the BBQ (as is) and got them all nice and roasted. Truly my favourite way to enjoy red peppers. I'm thinking there is going to be a goat cheese and red pepper omelet in my future (tomorrow morning to be exact...I'm looking at you, my omelet making hubbie). Love you!

And once they were all skinned and seeded, fit in an even smaller bowl! Crazy!
The tomatoes were tossed in a little olive oil along with some salt and pepper and roasted in the oven for about an hour.

I love this part of summer, when all the veggies are at their best. I hope to have a reminder of summer in the freezer (with these peppers and tomatoes), when the cold winds of winter show up here. But that's so far away, let's not think about that right now!
Oh, my what a gorgeous bounty! How I'd love a bowl of roasted peppers in my kitchen...I'm going to have to run to the farmers' market on Saturday :)
