The Brookster

Double the Pleasure


I'm doing it!  Don't tell anyone.  It will be our secret.  I'm going to try the Brookster recipe.  Shhh. 
For those who don't know, the Brookster is the creation of the Baked Boys; it is a brownie with a chocolate chip cookie on top. 
(Makes me think of the bunny with a pancake on his head)  Silly Bunny, pancakes are for eating.  Mmm pancakes.







So yes, we (me, myself and I) are combining the goodness of a chocolate chip cookie with the yum of a brownie.  Shut the front door!!  I know, right!  That is crazy.  Crazy enough that I need to try and make them.  I wasn't part of the Baked Sunday Morning's gang when they made them.  So this is me catching up, one recipe at a time.



Of course, I do this strictly because I need some brownies for my Baked Sunday Morning post tomorrow (stay tuned).  And of course for you dear reader.  Someone (hubbie) is away at a Boy's weekend, so someone doesn't get to participate (read: taste) this yummy sounding treat.  But I'll let him read the blog ('cause I'm a giver). 




I made the batter for the brownies and the cookies the night before, so I can get right down to the baking today.  For some reason if a dough needs to sit for a few hours in the fridge, making it the same day is a new form of torture (to this baking individual).  I know what patience means.....and I'm just not a huge fan of it.  So making the dough the night before, for a lot of recipes, just works for me.  Plus, the dishes will all be done and the only thing to do the next day is bake them off.  Mmm Hmm!!




Cookie dough is done.  And if I were someone who tasted cookie dough before it was baked, I'd say this was some good cookie dough.
'Nuff said....need to get this bowl covered and into the fridge.










Brownie batter.  Boom!  I didn't taste this one.  True story.  But it is very chocolatey...with the melted dark chocolate and cocoa powder.













Oh, and I am trying a new cocoa powder.  Cacao Barry-Extra Brute.
I have used the Valrhona (love it) for some time now and wanted to try something else.  (Out of curiosity and cost.)
I thought the price of this was excellent and the order arrived very fast.  I highly recommend Vanilla Food Company, for on line shopping.  It is a great Canadian company and they have so many things that I normally buy and need for baking.  The prices are great (I do compare).  They also ship to the USA for my baking buddies across the border!




So this morning, all I had to do was put a disk of the cookie dough on top of the brownie batter and pop the tin into the oven.  (easy peasy)  And the raw cookie dough was so good with my cup of coffee (she would say if she were the type of person who ate raw cookie dough).

Okay, the aroma wafting out of the kitchen is so good.  Way better than when I made my egg this morning.  What is it about eggs?  I mean I love eggs, I really do.  But I don't care for the smell of them when cooking.  This is my egg I made this morning, by the by.  It was so good.  I saw it at Serious Eats, and knew that I had to try it.  So I picked up some avocados and had a go with half of the avocado and an egg.  For those of you who don't like avocado and or eggs, do not try this.  But for those of you like me, that love both.....I highly recommend baking an egg in an avocado. (Peace out!)  But go to Serious Eats for the Eggs Baked in Avocados, as they do a much better job with showing exactly how good this can and should look.   
Back to the Famous Brookster.  This morning, I watched the video of Matt, when he was on the Martha Stewart show and was debuting the Brookster (then called the Brookie).  I find it helpful to watch baking videos to really understand a recipe.  And Matt was just so adorable on the show! 

Here are my brooksters straight out of the oven.  Looking good!

I am going to let them cool in the pan, as I think that will help them bake a little bit more (in case they aren't totally baked).

Okay, I think they have cooled sufficiently.  The test is now to get them out of the pan. Drum roll please........

Thank you Baked Boys for this recipe.  I'm so glad I finally tried it....and ate it....and loved it!

  1. All of that looks absolutely fabulous. I'm going to try eggs baked in Avocado. I have an under ripe Avocado lying in the fridge and was wondering what to do with it.
